It seems that I like to take crazy challenges. The first one I did this year went well, though not as well as it could have. Since there are 45 days until my wedding (OMG it's going to happen so soon!) I thought I would do my friend's BeachBody challenge.
The deal with this challenge is that she made me a meal plan, I do one shake a day instead of a meal (hello breakfast) and I am supposed to do 30 minutes of exercise a day for 10 days. Not too bad. Oh and there is a very active Facebook challenge group, and I am doing the challenge with two of my friends at work.
Day 1 went pretty well. I started my day off with a chocolate Shakeology. There are different recipes for the shakes and this is the one that I went with.
Butterfinger Blizzard
1 scoop/packet of chocolate
Shakeology,
1/2 cup vanilla almond milk (or regular skim milk),
1/2 cup of
water,
1 tbsp of natural peanut butter,
1 tbsp Butterscotch Jell-O powder,
tall
glass of ice,
and combine and blend until smooth.
It was actually pretty good. It took me about two hours to drink. I am just not a chugger of smoothies or milkshakes.
At 10 am, I had to eat a snack, which was kind of weird since I was still drinking my breakfast. I ate a string cheese, which served to make me hungry and then waited for lunch.
For lunch, I made these. (I cooked two chicken breasts which made ~4 lunches, two for me and two for my DF).
Chicken Quesadilla Wrap
• 4 oz chicken breast
• Low sodium taco seasoning
• ½ cup diced tomatoes
• 2 romaine lettuce leaves
• ¼ cup reduced fat shredded cheese • ¼ cup salsa
• Low carb tortilla shell or wrap
Season 4 oz skinless chicken breast
lightly with low sodium taco seasoning and grill or broil on both sides until
cooked through. Cut chicken into strips and pile the chicken, ½ cup diced
tomato, 2 leaves of romaine lettuce shredded, ¼ cup reduced-fat shredded
cheese, and ¼ cup salsa onto a 6 inch whole wheat low carb tortilla shells
(about 60 cal).
It was a surprising amount of food, but I thought that the salsa was a necessity. Oh and I substituted spinach for the romaine lettuce.
At 3 it was time for another snack, so I had some cottage cheese. I was pretty damn hungry by 3...
Then it was time for dinner. Unfortunately, a friend of mine had his wife of less than a year tell him that she was seeing someone else, so it was imperative that we take him out to dinner. I had planned on us having flank steak and asparagus for dinner, but we ended up at Applebee's instead. I tried to keep it healthy, but it was hard due to the fact that it was close to 8pm by the time we got to dinner.
That's about it. The only exercise I got was chasing Shep and Maki as they went after another dog at the dog park when we were waiting to go to dinner. Tomorrow is another day :)
