Day 3 of 10 Day BeachBody Challenge

While the morning of day three started off well enough, if you ignore the fact that the Cinnamon Roll shake was horrible. I got together with Lisa (the coach) and Alicia (my bridesmaid) for a workout at noon, but the one we did was kinda lame and we just got sweaty because it was hot.
My day just went downhill from there. I got really irritated in a meeting and it just threw me off. By the time I made it home, I didn't want to cook, I didn't want to clean up the cottonwood pods, I just wanted to kill something. Thankfully Alicia came over and kidnapped me. We went out and drank a margarita, had something called nacho salad, and took home an order of sopapillas. I was feeling great while we munched sopapillas and watched crappy tv. (Yes, Toddlers and Tiaras with pets was as awesome as I thought it might be).
Then, I broke through another threshold of frustration. I was vacuuming cottonwood pods out of my bed (that I am alergic to) because the DF is emotionally unable to lock the dogs out of our room at night, and the DF was sitting in the media room playing his video games, when Maki ripped down the dog gate and came bounding upstairs, happy as hell to see us.
I lost it and just started yelling at him. He was just one more person blasting through a boundary I had set. I was furious.
I set up the gate again and put him on the other side of it, yelled at the DF who went back to playing his game, and then went to bed and tried to sleep.

Here are the recipes from today (even if I didn't cook them all):

Cinnamon Roll - This tasted horrible! It turns out, if I don't add peanut butter, all I can taste is stevia - gag!
1 scoop/packet Chocolate Shakeology
1 cup skim milk
1 tsp cinnamon
½ tsp vanilla extract
8 pecan halves
tall glass of ice
combine and blend until smooth.

Egg Salad Wrap - Not too bad.
• 2 eggs
• ¼ cup low fat cottage cheese
• 1 tbsp Dijon mustard
• ½ tbsp dried dill
• Whole wheat tortilla shell
• 2 cups of mixed green salad
• 1 sliced tomato
• 1 tsp balsamic vinegar

Chop up 2 hardboiled eggs with the yolk removed from one. Mix with ¼ cup of low fat cottage cheese, 1 tbsp Dijon mustard, ½ tsp dried dill (optional) and salt and pepper to taste. Place on whole wheat tortilla shell (approx 70 cal) and wrap up. Serve with 2 cups of mixed greens, 1 sliced tomato, 1 tsp balsamic vinegar and toss all ingredients.


- At this point in the day, I'm cranky as hell. I think I might head out for a drink. (See above)

Whole Wheat Pizza
• 1 cup whole wheat flour
• 1 ¼cup rolled oats
• ¼ cup cornmeal
• 2/3 cup skim milk
• 1/4 cup olive oil
• 1 tsp. baking powder
• 1 cup of fat free, skim milk mozzarella cheese
• Pizza toppings (your choice but keep them healthy! veggies are best)
• Optional: Basil, oregano, garlic, garlic salt

Spray a standard-sized cookie sheet with olive oil. Preheat the oven to 425. Combine flour, oats,
cornmeal, and baking powder in a medium-sized bowl. Mix well. Add milk, olive oil, and spices to the
mixture and stir until combined. Place the dough on a lightly floured surface and roll it until it is about the size of the cookie sheet. Transfer it to the cookie sheet. Place the cookie sheet in the oven and bake for 12 to 15 minutes. Remove the crust from the oven and add toppings. Put back into oven for an additional 10 to 12 minutes or until the toppings are done.

Day 2 of 10 Day BeachBody Challenge

You know that feeling where you are hungry, and you know that you want something specific, but you have no idea what it is? That's where I am right now. Hungry!


I went to acupuncture today (if you haven't tried it, you should, I love it!) and part of the deal with that is that you can't do a good workout the rest of the day. That means I'm taking it easy tonight. 
I got up and tried to do a workout this morning, but my media server was down, so I jumped in the shower and wanted to bike to work, when I remembered that I had a noon acupuncture appointment, making that a no go. I'm now 2 for 2 days of not managing to get a 30 minute work out in. Oh well.


Here are today's recipes:



Chunky Monkey
1 scoop/packet chocolate Shakeology, 
1/2 cup vanilla almond milk (or skim milk), 
1/2 cup water, 
1/2 banana (best if frozen), 
1 tbsp natural peanut butter (or tbsp PB2), 
1/3 cup ground granola (I forgot this, oops), 
tall glass full of ice, 
ground the granola first in your blender and then add all the other ingredients and blend again until smooth.


Snack: 1/2 banana with drizzled peanut butter (not as good as it sounds)

Chicken Quesadilla Wrap
• 4 oz chicken breast
• Low sodium taco seasoning
• ½ cup diced tomatoes
• 2 romaine lettuce leaves
• ¼ cup reduced fat shredded cheese • ¼ cup salsa
• Low carb tortilla shell or wrap


Season 4 oz skinless chicken breast lightly with low sodium taco seasoning and grill or broil on both
sides until cooked through. Cut chicken into strips and pile the chicken, ½ cup diced tomato, 2 leaves
of romaine lettuce shredded, ¼ cup reduced-fat shredded cheese, and ¼ cup salsa onto a 6 inch whole wheat low carb tortilla shells (about 60 cal).

Snack: 1/2 c cottage cheese

Flank Steak with Baked Potato and Asparagus 
• 5 oz lean flank steak
• Low calorie steak marinade
• 1 cup of mushrooms
• Baked potato
• 1 Tsp. olive oil
• Asparagus spears
• Butter


Broil a 5 oz flank steak (marinated in a low-cal marinade of choice) for approx. 6min each side or until done. Top with 1 cup of sliced mushrooms and onions sautéed in 1 tsp olive oil. Serve with 10 steamed asparagus spears and ½ of a medium baked potato with dab of butter.

Day 1 of 10 Day BeachBody Challenge

Hi Guys!
It seems that I like to take crazy challenges. The first one I did this year went well, though not as well as it could have. Since there are 45 days until my wedding (OMG it's going to happen so soon!) I thought I would do my friend's BeachBody challenge. 
The deal with this challenge is that she made me a meal plan, I do one shake a day instead of a meal (hello breakfast) and I am supposed to do 30 minutes of exercise a day for 10 days. Not too bad. Oh and there is a very active Facebook challenge group, and I am doing the challenge with two of my friends at work.


Day 1 went pretty well. I started my day off with a chocolate Shakeology. There are different recipes for the shakes and this is the one that I went with.

Butterfinger Blizzard
1 scoop/packet of chocolate Shakeology, 
1/2 cup vanilla almond milk (or regular skim milk),
1/2 cup of water,
1 tbsp of natural peanut butter, 
1 tbsp Butterscotch Jell-O powder, 
tall glass of ice, 
and combine and blend until smooth. 
It was actually pretty good. It took me about two hours to drink. I am just not a chugger of smoothies or milkshakes.

At 10 am, I had to eat a snack, which was kind of weird since I was still drinking my breakfast. I ate a string cheese, which served to make me hungry and then waited for lunch.

For lunch, I made these. (I cooked two chicken breasts which made ~4 lunches, two for me and two for my DF).
Chicken Quesadilla Wrap

½ cup diced tomatoes
2 romaine lettuce leaves
¼ cup reduced fat shredded cheese ¼ cup salsa
Low carb tortilla shell or wrap

 Season 4 oz skinless chicken breast lightly with low sodium taco seasoning and grill or broil on both sides until cooked through. Cut chicken into strips and pile the chicken, ½ cup diced tomato, 2 leaves of romaine lettuce shredded, ¼ cup reduced-fat shredded cheese, and ¼ cup salsa onto a 6 inch whole wheat low carb tortilla shells (about 60 cal).   

It was a surprising amount of food, but I thought that the salsa was a necessity. Oh and I substituted spinach for the romaine lettuce.

At 3 it was time for another snack, so I had some cottage cheese. I was pretty damn hungry by 3...

Then it was time for dinner. Unfortunately, a friend of mine had his wife of less than a year tell him that she was seeing someone else, so it was imperative that we take him out to dinner. I had planned on us having flank steak and asparagus for dinner, but we ended up at Applebee's instead. I tried to keep it healthy, but it was hard due to the fact that it was close to 8pm by the time we got to dinner.

That's about it. The only exercise I got was chasing Shep and Maki as they went after another dog at the dog park when we were waiting to go to dinner. Tomorrow is another day :)
